Place the flatbread on the prepared baking sheet. Brush the flatbread lightly with olive oil to enhance crispness.
Layer the buffalo chicken evenly on the flatbread, ensuring it's spread out for even cooking.
Sprinkle mozzarella cheese and blue cheese crumbles (if using) generously over the chicken.
Bake in the preheated oven for about 10-12 minutes, or until the cheese is bubbly and the edges of the flatbread are golden brown.
Remove from the oven and let it cool slightly. Drizzle ranch or blue cheese dressing over the top, and garnish with sliced green onions.
Slice into pieces and serve warm.
Notes
Serve the flatbread on a wooden board, with extra buffalo sauce and ranch dressing on the side for dipping. Add a sprinkle of fresh cilantro for a pop of color!
