Instructions
In a large mixing bowl, combine the shredded chicken, cheddar cheese, flour, breadcrumbs, Parmesan cheese, and green onions.
In another bowl, beat the eggs and season with garlic powder, onion powder, salt, and pepper.
Pour the egg mixture into the chicken mixture and mix well until all ingredients are combined and form a dough-like consistency.
Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom of the pan.
Using your hands, form small patties (about the size of your palm) from the chicken mixture.
Once the oil is hot, carefully place the patties in the skillet, making sure not to overcrowd the pan. Fry them in batches if necessary.
Cook for about 4-5 minutes on each side or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.
Once cooked, transfer the fritters onto a paper towel-lined plate to absorb excess oil.
Notes
Serve warm with a side of dipping sauce like ranch or spicy aioli. Garnish with chopped parsley.
