Comforting Chicken Noodle Soup

boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

olive oil

onion, diced

carrots, sliced

stalks
celery, sliced

garlic, minced

low-sodium chicken broth

teaspoon
dried thyme

teaspoon
dried oregano

egg noodles

frozen peas

fresh parsley, chopped
Instructions
In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery and sauté for about 5 minutes until softened.
Stir in the minced garlic and cook for another minute until fragrant.
Add the chicken pieces to the pot and cook for about 5-7 minutes, until lightly browned on all sides.
Pour in the chicken broth, followed by thyme, oregano, and season with salt and pepper. Bring the mixture to a boil.
Once boiling, reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld and the chicken to cook through.
Stir in the egg noodles and frozen peas, cooking for an additional 8-10 minutes until the noodles are tender.
Taste and adjust the seasonings as needed.
Remove from heat and let sit for a few minutes before serving.
Notes
Serve hot with freshly chopped parsley and crusty bread on the side.
