Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Add the minced garlic and cook for an additional minute until fragrant.
Stir in the ground turkey or beef, breaking it up with a spatula. Cook until browned and fully cooked through, about 6-8 minutes.
Once the meat is cooked, add the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Stir to combine.
Pour in the chicken or vegetable broth and bring the mixture to a simmer. Let it cook for about 10-15 minutes, allowing the flavors to meld together.
Reduce the heat to low, then add the softened cream cheese, stirring until melted and fully incorporated into the soup.
Mix in the shredded cheddar cheese, allowing it to melt and create a creamy texture.
Taste the soup and adjust with salt and pepper as needed.
Serve hot, topped with your choice of sliced green onions, avocado, cilantro, and tortilla chips for added crunch.
