Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
Add the black beans and corn to the skillet, mixing well to combine. Cook for an additional 3-5 minutes until heated through. Remove from heat.
Lightly spray each tortilla on both sides with cooking spray. Lay them in the cups of a muffin tin or taco holder, forming a U-shape to create taco shells.
Spoon the beef mixture evenly into each tortilla shell. Top with shredded cheddar cheese.
Place the muffin tin in the preheated oven and bake for 10-12 minutes until the tortillas are crispy and the cheese is melted and bubbly.
Carefully remove the tacos from the muffin tin and transfer them to a serving platter. Top with your favorite toppings, such as diced tomatoes, shredded lettuce, sour cream, or avocado slices.
