Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the halved Brussels sprouts and minced garlic.
In a separate small bowl, whisk together the olive oil, lemon juice, lemon zest, honey (or maple syrup), salt, pepper, and red pepper flakes if using.
Pour the lemon-garlic mixture over the Brussels sprouts and toss well to coat evenly.
Spread the Brussels sprouts in a single layer on a baking sheet, cut side down for maximum crispiness.
Roast in the preheated oven for 20-25 minutes or until the sprouts are golden brown and crispy, stirring halfway through for even cooking.
Once done, remove from the oven and let cool for a couple of minutes.
Transfer to a serving dish and garnish with chopped fresh parsley.
Notes
For extra crispiness, ensure the Brussels sprouts are spread out in a single layer on the baking sheet.
