In a large mixing bowl, combine the halved Brussels sprouts, minced garlic, olive oil, salt, black pepper, and smoked paprika. Toss until the Brussels sprouts are well coated in the mixture.
Spread the Brussels sprouts in a single layer on a baking sheet.
Roast in the preheated oven for about 20 minutes, stirring halfway through to ensure even cooking.
After 20 minutes, remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the Brussels sprouts. Return to the oven and roast for an additional 5-10 minutes, or until the cheese is melted and golden brown.
Once done, remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
