In a medium mixing bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, thyme, paprika, salt, and pepper until well combined.
Place the chicken breasts in a baking dish and pour the honey mustard mixture over them, ensuring they are well coated on both sides.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The glaze should be bubbling and slightly caramelized.
Once done, remove the baking dish from the oven and let the chicken rest for about 5 minutes. This will help keep it juicy.
Garnish with freshly chopped parsley before serving.
