Cover the bowl and refrigerate for at least 4 hours, or overnight for best results, allowing the chia seeds to expand and create a pudding-like consistency.
After the waiting time, stir the chia pudding to check the consistency. If it's too thick, you can add a splash more coconut milk to loosen it up.
To serve, layer the chia pudding in serving glasses or bowls. Add a layer of diced mango on top of the pudding.
Finish with an additional sprinkle of diced mango and garnish with fresh mint leaves if desired.
