Maple Cinnamon Roasted Sweet Potatoes

sweet potatoes, peeled and cut into 1-inch cubes

Instructions
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking.
In a large bowl, combine the maple syrup, olive oil, ground cinnamon, ground nutmeg, salt, and black pepper. Whisk together until well combined.
Add the cubed sweet potatoes to the bowl and toss them in the maple mixture until they are evenly coated.
Spread the sweet potatoes out in a single layer on the prepared baking sheet. Make sure there is space between each cube to allow for even roasting.
Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are fork-tender and caramelized on the edges.
If using, sprinkle the chopped pecans over the sweet potatoes for the last 5 minutes of roasting for added crunch.
Once done, remove from the oven and let cool slightly before serving. Garnish with fresh parsley if desired.
