In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, cinnamon, and salt. Stir well until all the ingredients are fully blended.
Fold in the chopped pecans and diced apple (if using), making sure they are evenly distributed throughout the mixture.
Divide the oat mixture into individual jars or airtight containers, ensuring there’s enough room at the top for expansion as the oats soak.
Seal the containers and place them in the refrigerator overnight (or for at least 4-6 hours).
In the morning, stir the oats well before serving. If they are too thick for your liking, add a splash more almond milk to reach your desired consistency.
Top with fresh fruits (like banana slices, berries, or more apple) and additional chopped pecans for extra crunch.
