In a blender, combine the almond milk, chocolate protein powder, frozen banana, fresh mint leaves, cacao nibs, honey or maple syrup (if using), and peppermint extract.
Blend on high speed until smooth and creamy. If you prefer a thicker shake, you can add a handful of ice cubes and blend again until desired consistency is reached.
Taste the shake and adjust sweetness if necessary by adding more honey or maple syrup.
Once blended, pour the shake into a tall glass.
Garnish with a few whole mint leaves and sprinkle some additional cacao nibs on top for an attractive presentation.
