In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Mix well to ensure the dry ingredients are evenly distributed.
In a separate bowl, combine the creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until you have a smooth and creamy mixture.
Pour the wet mixture into the dry mixture and stir until fully combined. The mixture should have a thick and sticky consistency.
Add in the mini chocolate chips and fold them into the mixture until evenly distributed.
Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used, placing the balls on a parchment-lined baking sheet.
Once all the bites are formed, place the baking sheet in the refrigerator for about 30 minutes to set.
