Instructions
In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Mix until all ingredients are evenly combined.
Add the pumpkin spice blend, salt, and mini chocolate chips (if using). Stir to combine thoroughly.
Once mixed, add the chopped nuts or seeds and fold them into the mixture.
Using your hands, form the mixture into small bite-sized balls (about 1 inch in diameter). If the mixture is too sticky, wet your hands slightly for easier handling.
Place the formed energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
Once firm, you can store the energy bites in an airtight container in the refrigerator for up to one week or freeze them for longer storage.
