Prepare your fruit by washing, peeling, and cutting them into appropriate sizes.
In a small bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth. Set aside as your yogurt dip.
Take a skewer and start threading the fruit onto it in a colorful pattern. For example, you can create a sequence of strawberry, pineapple, kiwi, blueberry, grape, and watermelon. Repeat this pattern until the skewer is filled (about 5-6 pieces of fruit).
Repeat step 3 for the remaining skewers until all fruit is used up.
Arrange the fruit kabobs on a serving platter.
Serve the yogurt dip in a small bowl alongside the kabobs.
Optionally, garnish the platter with fresh mint leaves for an added touch of color and flavor.
