Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.
In a skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
In a mixing bowl, combine the sautéed spinach, feta cheese, cream cheese, lemon juice, oregano, salt, and pepper. Stir until all ingredients are well incorporated.
Place the salmon fillets on a cutting board, skin-side down. Using a sharp knife, gently cut a pocket into each fillet, being careful not to slice all the way through.
Spoon the spinach and feta filling into each pocket, dividing the mixture evenly among the fillets.
Place the stuffed salmon fillets in the prepared baking dish. Bake in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Once cooked, remove the salmon from the oven and let it rest for a few minutes. Serve garnished with lemon wedges and fresh dill for an extra burst of flavor.
