Instructions
Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or cooking spray and set aside.
In a skillet over medium heat, add a splash of olive oil. Once heated, add the diced mushrooms and sauté for about 3-4 minutes until softened.
Add the chopped spinach to the skillet with the mushrooms and cook for an additional 2-3 minutes until the spinach is wilted. Remove from heat and let cool slightly.
In a large mixing bowl, crack the 6 eggs and whisk them together until well blended.
Add the milk, garlic powder, onion powder, salt, and pepper to the eggs, whisking until combined.
Stir in the sautéed mushroom and spinach mixture, followed by the crumbled feta cheese. Mix gently to ensure even distribution.
Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 18-20 minutes, or until the muffins are set and lightly golden on top.
Remove from the oven and let cool in the muffin tin for about 5 minutes before carefully removing.
Notes
Serve the muffins warm on a platter. Garnish with fresh herbs like parsley or chives for added color and flavor.
