baby spinach

carrots, sliced

bell pepper, chopped

coconut milk

Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
Add the diced chicken to the pot, cooking until it is browned on all sides, roughly 5-7 minutes.
Sprinkle in the ground turmeric, cumin, and coriander, stirring well to coat the chicken and onions.
Pour in the chicken broth, scraping any bits stuck to the bottom of the pot. Bring the mixture to a boil.
Once boiling, reduce the heat to low and add the sliced carrots and chopped bell pepper. Let simmer for 10 minutes or until the vegetables are tender.
Stir in the baby spinach and coconut milk, allowing it to heat through for another 3-5 minutes.
Season the soup with salt and pepper to taste.
Serve hot with fresh cilantro on top and lemon wedges on the side for an extra zing.
Notes
