In a medium bowl, combine the Greek yogurt, lemon zest, lemon juice, and honey. Mix well until smooth and creamy. Taste and adjust sweetness with more honey if desired.
In a separate bowl, gently fold in the fresh blueberries, being careful not to mash them.
To assemble the parfaits, start by spooning a layer of the lemon yogurt mixture into the bottom of serving glasses or bowls.
Add a layer of granola on top of the yogurt, followed by a layer of the blueberry mixture.
Repeat the layers until the glasses are filled, finishing with a dollop of yogurt and a sprinkle of granola on top.
If using chia seeds, sprinkle them on top of the final yogurt layer for added texture and nutrition.
